Over the review period of 2000-2010 the Australian dairy products industry increased by 4% per annum. It is Australia´s largest processed food industry, and nationally ranks in the top four rural industries. Total market size more than doubled over the review period, reaching a value of A$15.5 billion by the end of 2010.

Growth of demand averaged 8% annually – twice the rate of industry revenue growth. The main buyers were households, accounting for 66% of the total market value on average throughout the review period. However, a slow but steady decline in relative importance was evident, as the value share stood at 64% in 2010. Since the advent of the economic downturn in 2008, Australians are eating at home more



frequently in order to reduce their discretionary spending.

As a common ingredient in home cooking, cream registered the fastest growth in other dairy products during 2010. Businesses accounted for 36% of the total market value in 2010, up seven percentage points on 2000.
