As in most other consumer foodservice categories, sales through full-service restaurants are highly fragmented. The Boston Pizza, St Hubert, Pizza Hut and Swiss Chalet brands remained in the lead in 2012, together accounting for a value share of just 11%. The number of outlets remained mostly static across the sector, with Pizza Hut closing an outlet and St Hubert opening three. This indicates that local chains fare slightly better than multinational chains.
Growth in the volume of sales in the full-service restaurant category resumed only in 2011, after a negative spell of economic recession in 2009 and 2010. In 2012 current value sales in the category grew only modestly, by 2% in current value terms to reach sales of C$21.3 billion.
At the same time, growth in outlets was even lower in 2012 at less than 1%, with a virtually unchanging volume of transactions with only 0.3% growth.
