Skylark Group remained the leading player in value terms in 2012, with a 10% share in chained full-service restaurants. The company saw a sales increase of 1% in 2012, as it succeeded in raising the spend per transaction by introducing menus which were priced higher than the existing menus. Although the company had long been a leader, it had suffered from a deficit balance.

In order to solve the prolonged deficit balance, the company shut down around 300 outlets over the review period, as well as sold itself to Bain Capital, a capital fund which supported a great deal of rebuilding of foodservice operators, such as Domino´s Pizza, in November 2011. It was also announced in December 2012 that a former



president of McDonald´s Corp, Ralph Alvarez, would become the chairman and representative director of Skylark from 2013.
