The expected slump of the UK foodservice market following the economic recession and the unstable economic outlook that followed did not materialise, although value sales and transactions were affected. After the drop reported in 2009, value sales maintained positive but modest growth over the 2010-2012 period, supported by rising food prices.
These increases were not entirely passed on to consumers as operators opted to increase promotional activities to attract cash-strapped consumers. Volume transactions increased marginally in 2012 but were still lower than the peak level reached in 2007. Only the number of outlets continued the declining trend as underperforming stores were closed.
